Thai Basil Beef

This THAI BASIL BEEF is perfect for meal prep. It's quick, easy and all you need is one pan. It's truly the perfect weeknight dish or prep it for your lunches for the week.

 

Ingredients:  

 2 tsp olive oil

 1 lb grass fed ground beef

 1 red bell pepper, thinly sliced

 1 yellow onion, thinly sliced

1 cup sugar snap peas

 5 cloves garlic, minced

 1 cup loosely packed Thai basil (reg basil if you can't find Thai)

 fresh cilantro, optional

 2 tosp red curry paste (or chili paste)

3 tbsp coconut aminos or tamari salt
to taste

1 tbsp sesame oil

 1 tsp apple cider vinegar

 

 In a small bowl, mix together curry paste, coconut aminos, sesame oil and apple cider vinegar until combined.  Heat oil in a large skillet set over medium high heat. Add the ground beef and cook until browned, breaking it up with a spoon and stirring often, about 6 minutes.  Add the bell pepper, onion, sugar snap peas and garlic to the beef and cook until vegetables start to soften, about 5 minutes.  Pour the sauce mixture along with the fresh basil (reserving a fresh few leaves for the top) and continue cooking until basil starts to wilt. Serve over brown rice and top with fresh basil and cilantro.  Enjoy!
