Pumpkin Steel Cut Oats

I am obsessed with this Pumpkin Steel Cut Oats recipe. Personally, I usually like rolled oats much better but this was so simple and tasty. I have been enjoying these oats and they have been perfect for my super busy schedule and the cool fall weather. 

 

INGREDIENTS

2 cups unsweetened vanilla almond milk (16 oz)

1 cup steel cut oats

1 cup pumpkin puree

1 cup water

1/3 cup maple syrup

1 tsp pumpkin pie spice

1 tsp vanilla extract (you could instead use 1/2 tsp maple extract and 1/2 tsp vanilla)

1 cinnamon stick

1/4 tsp salt

 

Add all ingredients except pumpkin puree to the Instant Pot bowl and mix until combined. Close the lid to the Instant Pot and turning on high pressure for 6 minutes, followed by 10 minutes of natural release. Once the 10 minutes of natural release are complete, quick release any remaining pressure. Stir pumpkin puree and brown sugar into the oats until completely combined. Add desired toppings. Enjoy!
