Cajun Shrimp and Sausage

This Cajun Shrimp and Sausage comes together is no time, is punched with flavor, and besides plump shrimp and juicy turkey sausage, there are lots of fresh veggies all tossed with a cajun seasoning blend made in one pan!

Ingredients: 

1 lb large raw shrimp, peeled & tail on or off

4 fully cooked andouille chicken sausages, sliced

1 red bell pepper, cut into large chunks

1 orange bell pepper, cut into large chunks

zucchini, cut into 1/4inch slices 1/2 large red onion, cut into large chunks

 

For the seasoning mixture: (or sub 3 tbsp of a store-bought cajun seasoning)

1 tbsp paprika

2 tsp garlic powder

2 tsp italian seasoning

2 tsp salt

1 tsp dried thyme

1 tsp onion powder

cayenne to taste

 

Preheat oven to 400F. Add all of the seasoning mixture to a small bowl and stir until combined. Add veggies, 1 tbsp of oil and half of the seasoning mixture to a large bowl. Toss to coat. Then, spread out evenly on a sheet pan. Bake for 10 minutes. Meanwhile, add shrimp, remaining oil and seasoning mixture to a large bowl and toss to coat. Add shrimp and chicken sausage on top of the veggies. Cook for another 6 minutes or until the internal temp of the shrimp reaches at least 120F. Enjoy as is or top with chopped cilantro, fresh lime juice and avocado. For a more filling meal, serve over rice/orzo. Enjoy!
